Preheat oven to 350 degrees. Clean, dry, and de-stem a big bunch of kale. Then, chop or tear the leaves into bite-sized bits. Next, place the kale leaves on a rimmed cookie sheet and drizzle with two tablespoons olive oil and a good bit of salt. Bake for 10 min until the edges of the leaves start to brown and the leaves get brittle and crispy.
These aren't quite the same as potato chips but they were pretty good. My little taste tester enjoyed them!

We love kale chips! This is the BEST recipe for kale chips! It's from Superfood Cuisine by Julie Morris. We have a dehydrator but I've made them in the oven before too.
