Simple Kale Chips

I had a bunch of organic kale sitting in my fridge from my visit to my CSA farm. I've heard about kale chips for a long time and I've wanted to try them so this seemed like just the right time.

Simple Kale Chips
Preheat oven to 350 degrees. Clean, dry, and de-stem a big bunch of kale. Then, chop or tear the leaves into bite-sized bits. Next, place the kale leaves on a rimmed cookie sheet and drizzle with two tablespoons olive oil  and a good bit of salt. Bake for 10 min until the edges of the leaves start to brown and the leaves get brittle and crispy.


These aren't quite the same as potato chips but they were pretty good.  My little taste tester enjoyed them!

Chicken Noodle Soup
My garden is producing leafy lettuce now so salad is on the menu this week for sure. Otherwise I'm sticking with some of my favorite, easy dinners and not doing anything new.

Tuesday: Baked Tilapia, rice, steamed broccoli
Wednesday: Pasta with homemade marinara & tossed salad
Thursday: Roast Chicken with carrots and potatoes
Friday: Tacos
Saturday lunch: Chicken Noodle Soup
Saturday dinner: Pizza
Sunday: Leftovers & Burgers
